On November 2022, Gia’s winter menu revolves around a single word: Nourishment.


Nourishment Beyond Winter


Nourishment as care, warmth, shelter, and comfort found in steaming dishes, in the gentle heat that once warmed flushed cheeks in childhood winter memories of Hanoi.

Nourishment as restoration, quietly strengthening the body through the cold, drawn from precious ingredients beneath the earth and within calm waters.



But before nourishment, there must be receptiveness. To nourish, one must first make space to receive, to slow down, and to allow care to settle naturally.With Winter Nourishment, Gia invited you into the journey of receptiveness  and hopes you discover your own sense of nourishment through each dish, each drink. Together, we endure and nurture one another through the cold season.


Flavors Of Winter Nourishment


Cabbage | Mam Nem - A dish defined by restraint rather than complexity

Winter cabbage is grilled over charcoal until lightly charred, carrying a subtle smokiness from the fire. It is paired with a rich sauce made from mam nem and peanuts. The bitterness and sweetness of the cabbage intertwine with the creamy, savory depth of the sauce, creating a flavor that gently transforms a familiar winter vegetable into something unexpectedly immersive.



A Bowl of Porridge - A Hanoi Memory

Do your childhood memories include a hot bowl of porridge on a cold Hanoi morning? A bicycle drifting through narrow streets, a large pot of porridge steaming at the back, accompanied by bags of golden fried dough, scissors, spoons, and ladles. Simple tools, yet enough to create a deeply comforting winter meal for all ages.



The porridge at Gia may or may not resemble the one from your memory. But within its warmth, we hope diners reconnect with a quiet fragment of Hanoi’s culinary culture: humble, enduring, and deeply human.
