Autumn Tasting Menu at Gia: Balance Through Vietnamese Philosophy


In Vietnamese culinary culture, the concept of Ngu Hanh Tuong Sinh (the Five Elements in mutual generation) is deeply embedded, not only in elaborate ceremonial dishes, but also in everyday meals, street food, and childhood snacks. It is an intuitive understanding of balance: between hot and cold, richness and lightness, nourishment and restraint.


Inspired by this philosophy, Gia’s Autumn Tasting Menu brings together seasonal ingredients and thoughtful techniques to create a dining experience rooted in the spirit of “delicious – wholesome – nourishing.”


As Tiet Lap Thu (the beginning of autumn) arrives, the intensity of summer heat fades, heavy rains subside, and the air grows calmer. This seasonal transition invites us to slow down, recalibrate, and prepare both body and mind for the months ahead. At Gia, autumn is not simply a change of weather, it is a moment of realignment.


Flavors Of Autumn Season


Squid | Lemon: A Familiar Harmony, Reimagined

Salt, pepper, and lemon are perhaps the most instinctive companions to seafood. The natural sweetness of squid, sharpened by acidity and warmth, creates a balance that feels almost universal.



In this autumn menu, Gia revisits this classic combination through a contemporary lens.

The squid body is finely sliced and paired with a salt–pepper–lemon sauce that delivers an immediate burst of flavor. Alongside it, crispy fried squid tentacles reinforce texture and depth, anchored by the same seasoning that evokes familiarity.


Set within a traditional flavor framework yet presented anew, this dish offers comfort without predictability, a quiet reminder of how something well-known can still surprise.


Nghe An Eel: Turmeric Memory, Warmth, and Nourishment

Eel from Nghe An is known for its firm texture and nutritional richness. Though smaller due to the region’s harsh terrain, these eels are strengthened by the fertile alluvium of the Lam River, resulting in concentrated flavor.



For many, eel porridge or soup, golden with turmeric and gently spiced, is a vivid memory of home.


At Gia, this memory is translated into a refined expression. The eel is prepared as a smooth pâté, hidden within crisp rice paper, and paired with taro and turmeric espuma to balance aroma and warmth. A final touch of chili oil made from Wagyu beef fat adds gentle heat and depth.


This dish honors both regional heritage and the philosophy of autumn nourishment, warming, grounding, and quietly sustaining.


Tangerine | Ginger — Dessert Through the Lens of Balance

Vietnamese cuisine places great emphasis on the balance between hot (heat), cold, warm, cool, and neutral elements, a principle deeply tied to health and digestion.

Opening the dessert course, Gia explores this contrast through a dialogue of temperatures and sensations.



Warm cassava porridge is paired with gently tart tangerine sorbet, finished with a rich ginger foam. Heat meets cold, softness meets brightness, creating a harmonious finish that refreshes without overwhelming.


It is a dessert designed not to indulge excessively, but to restore equilibrium.
