"I always approach ingredients from my own unique perspective, from childhood to now.

 

It's not the perspective of a chef or a business person, and it's not influenced by anyone else's perspective. It's just my own perspective, and everything through that perspective is pretty straightforward.

 

The ingredient is the key – I want to explore it, understand it."

Returning to Vietnam after working and creating in many kitchens around the world, Chef Sam Tran hoped to bring a high-end and modern flavor experience, with full respect for the essence of Vietnamese culture and cuisine at her own restaurant, Gia, where she has been at the helm for nearly four years.

“If you want to be the best, you have to be surrounded by the best” – Chef André Chiang told him and from that, he always keeps it in mind and works as a philosophy.

With over 14 years in the F&B industry, starting from his student days at Les Roches in Switzerland, Long Tran has worked at numerous luxury hotels and restaurants in the UAE, Qatar, Thailand, and Singapore. And from 2014, he began to shift his efforts to independent fine dining restaurants or Michelin-starred restaurants in order to discover something new and nurture himself in a new setting with higher pressure.

Along with Gia Restaurant (1 Michelin star), he works as a Co-founder & General Manager of Seroja Restaurant (1 Michelin star and First Green Star of Singapore).
