Inside The River
(2024)
The timeline flows through the capital, dividing its largest river, the Red River, into smaller streams winding through the city and larger tributaries encircling it. The name “Hà Nội,” therefore, means “the land inside (Nội) the rivers (Hà).”
The Red River has profoundly inspired us in crafting this season’s menu, “Inside The River.” Just as the rivers embrace Hà Nội, we deeply honor the culinary gifts that result from generations of harmonizing with the gentle flow and fertile silt of this region.

Golden Forest, Silver Sea

Rừng vàng, Biển bạc (Vietnamese idiom, can be understood as “Gold forest, Silver sea”) . Take a moment to admire the breathtaking beauty of the natural world, and listen to its intriguing sounds. We understand that the wild, primitive nature contains a vast life force.
Overwhelmed by the priceless gifts nature has given, we want to share with you all that we have discovered and extend a warm welcome back to the beauty of the natural world, just as we have been welcomed.

Cỗ Bàn
(2023)
Cỗ Bàn was how we refer to a traditional feast in Vietnam, which was prepared when an important family event or Tết (Lunar New Year) was around. Rooted in memory and crafted with the finest ingredients and care, it’s a tribute to heritage, celebration, and the evolving spirit of shared meals.

Full Moon
(2023)
The brightest Full Moon period of the year emerges as the Sun takes a step back. And also everything transforms along with the season, carrying the wonderful flavor of a bountiful harvest. Similarly to how farmers celebrate after the crop, we will treat diners to a warm feast with the significant scent of the North Delta's autumn, with the story about Full Moon in each dish and experience.

Nhà

"Nhà" is the menu celebrating the love for family (“gia đình”, where our name “Gia" comes from). It is a tray of food that brings together the most prominent and beloved dishes, as experienced by those who have visited Gia over the past two years.

The details of the festive season that created the culture, now will show to you through every dish at Gia this season.

Winter Nourishment

This is a process of finding, collecting and selecting ingredients to create a quality and unique menu. We've spent a long time finding and receiving many ingredients in every form, every region and in every emotional memory. From there, we find a way to bring out the "nourishment" when combining them together, harmonizing in a dish rich in flavor and emotional warmth.

Autumn Menu

This menu is a quiet journey through Vietnam’s regions, tracing the shifting moods and colors of autumn. Each dish captures a different shade of the season, revealing the depth and beauty of Vietnam’s culinary landscape in its most contemplative time of year, giving the spirit of "delicious - healthy - nutritious".

Summer Menu

Rather than a gentle summer awakening, Gia’s Summer Menu on 2022 is more like waves glistening under the sun. Each dish a new wave, soothing yet surprising, never the same, yet always in harmony. A seaside symphony told through flavors and stories.

Spring Menu

After a year of lockdown due to the COVID-19 pandemic, this menu marked a fresh beginning. On this menu, we used so much Vietnam’s mountainous landscapes and native ingredients around Vietnam, it pays homage to tradition while embracing modern techniques — a respectful yet bold step forward in our culinary journey.

Our debut menu celebrates traditional Vietnamese cuisine through the lens of the five elements: Water - Fire - Earth - Wood - Air. Guided by the ancient philosophy of Yin and Yang, it brings together ingredients, textures, and colors in perfect harmony.
